Easy Taco Filling with Roasted Red Pepper Sauce

This flavorful taco recipe comes together fast with simple, real ingredients. A seasoned ground beef base is paired with a bright, fresh red pepper sauce. The seasoning is completely based on your taste preferences—start small and adjust as you go.

Ingredients (serves 4):

For the red pepper sauce:

  • 1 roasted red bell pepper (jarred or homemade)
  • 1 small yellow onion
  • A handful of fresh cilantro
  • Juice of 1 lime
  • 1 tbsp extra virgin olive oil
  • Salt, to taste

For the beef filling:

  • 1 lb ground beef
  • Chili powder
  • Cumin
  • Garlic powder

Instructions:

    Combine in a bowl with lime juice, olive oil, and salt. Toss well and refrigerate to let the flavors blend.
  2. Cook the beef filling:
    In a skillet over medium heat, partially brown the ground beef.
    Add chili powder, cumin, and garlic powder in equal parts. Start with 1/2 teaspoon of each, then taste and adjust to your liking.
    Add salt to taste and cook until the beef is fully browned.
  3. Assemble your tacos:
    Fill warm tortillas or taco shells with the seasoned beef.
    Top with red pepper sauce, avocado slices, greens, cheese, and a spoonful of Greek yogurt.
