Quick Coleslaw with White Wine Vinaigrette

This fast and flavorful coleslaw uses pre-shredded veggies and a bright, tangy homemade vinaigrette. Fresh herbs add a clean finish—perfect as a quick side.

Ingredients (serves 2–4):

  • 1 bag (about 10–12 oz) pre-shredded coleslaw mix (cabbage + carrots)
  • 2–3 green onions, chopped
  • 2–3 tbsp chopped Italian parsley

For the vinaigrette:

  • 3 tbsp white wine vinegar
  • 1 tbsp olive oil
  • Sugar, to taste (I prefer mine sweeter, so I use more)
  • Pinch of salt

This vinaigrette follows a 3:1 vinegar-to-oil ratio for a bold, tangy flavor. You can adjust the ratio to suit your taste—some prefer a more balanced 1:1 approach. Note: The salt’s primary purpose is to help dissolve the sugar and balance the acidity.


Instructions:

  1. In a large bowl, combine coleslaw mix, green onions, and parsley.
  2. In a small bowl or jar, whisk together the vinegar, olive oil, sugar, and salt until the sugar is fully dissolved.
  3. Pour the vinaigrette over the slaw mixture and toss to coat.
  4. Let sit for 5–10 minutes to allow flavors to meld, or serve right away.
