Boost Your Health with Collagen-Rich Bone Broth

Collagen is essential for maintaining joint, gut, and skin health. Bone broth is a fantastic source of this vital protein. Today, I’m excited to share my recipe for a flavorful and nourishing chicken bone broth that’s rich in collagen.

Ingredients:

  • 3 chicken carcasses
  • 1.5 pounds of chicken livers
  • 1.5 pounds of gizzards
  • 1.5 pounds of chicken feet
  • 1 tablespoon of apple cider vinegar
  • Garlic (to taste)
  • Onions (to taste)
  • Bay leaves (to taste)
  • Celery (to taste)
  • Peppercorns (to taste)
  • Carrots (to taste)
  • 1 bunch of kale

Instructions:

Prepare the Ingredients:

  • Place the chicken carcasses, livers, gizzards, and chicken feet into a large stockpot.
  • Cover the ingredients with water.

Add Flavorings:

  • Add one tablespoon of apple cider vinegar to help extract minerals from the bones.
  • Include garlic, onions, bay leaves, celery, peppercorns, and carrots to enhance the flavor.

Cook the Broth:

  • Fill the pot to the top with additional water.
  • Bring the mixture to a boil.
  • Reduce the heat and let it simmer for 12 hours.

Add Kale:

  • At the twelve-hour mark, add one bunch of kale.
  • Continue cooking for a total of 19 to 21 hours to ensure maximum collagen release.

Strain and Store:

  • Let the broth cool to room temperature.
  • Remove bones and vegetable debris.
  • Strain the mixture through a fine mesh strainer, then through cheesecloth to remove any remaining sediment.
  • Refrigerate for an hour or two to allow the fat to congeal on top.
  • Remove the fat cap.

Portion and Freeze:

  • The final broth should have a jello-like consistency, indicating it’s loaded with collagen.
  • Divide the broth into three-cup portions and freeze in baggies.
  • Use any broth refrigerated for more than two days to ensure freshness.

During the winter months, I make bone broth frequently and enjoy drinking a cup before each meal, three times a day. It’s one of my staples for maintaining great health throughout the colder season. Collagen can help fight chronic inflammation.1
