Roasted Eggplant with Middle Eastern–Inspired Green Za’atar

Ingredients

(Serves 2 as a main or 4 as a side)

  • 1 large eggplant, washed and cut in half lengthwise
  • 2 tablespoons Sadaf green za’atar (or your favorite green za’atar blend)
  • 3 tablespoons extra-virgin olive oil, divided
  • ¼ teaspoon sea salt (adjust to taste)
  • Optional for serving: plain Greek yogurt, lemon wedges, fresh parsley or mint

Instructions

  1. Preheat the oven to 400°F (200 °C).
  2. Score the eggplant. Using a sharp knife, crosshatch the flesh of each half, taking care not to pierce the skin.
  3. Make the za’atar paste. In a small bowl, mix 2 tablespoons za’atar with 1½ tablespoons olive oil and the salt to create a thick paste.
  4. Season the eggplant. Generously smear the za’atar paste over the cut sides of the eggplant. Drizzle the remaining olive oil over each half so it seeps into the cuts.
  5. Roast. Place the eggplant cut side up on a parchment-lined baking sheet. Roast for 25–30 minutes, or until the flesh is tender all the way to the rind and lightly caramelized on top.
  6. Finish and serve. Top with a dollop of Greek yogurt, a squeeze of fresh lemon juice, and a sprinkle of extra za’atar or herbs if desired.
