Ingredients

- 1 large eggplant, washed and cut in half lengthwise

Instructions
- Preheat the oven to 400°F (200 °C).
- Score the eggplant. Using a sharp knife, crosshatch the flesh of each half, taking care not to pierce the skin.
- Make the za’atar paste. In a small bowl, mix 2 tablespoons za’atar with 1½ tablespoons olive oil and the salt to create a thick paste.
- Season the eggplant. Generously smear the za’atar paste over the cut sides of the eggplant. Drizzle the remaining olive oil over each half so it seeps into the cuts.
- Roast. Place the eggplant cut side up on a parchment-lined baking sheet. Roast for 25–30 minutes, or until the flesh is tender all the way to the rind and lightly caramelized on top.
- Finish and serve. Top with a dollop of Greek yogurt, a squeeze of fresh lemon juice, and a sprinkle of extra za’atar or herbs if desired.
