Quick Microwave Egg Bites (No Preservatives, No Fuss)

Ingredients (per serving):

  • 1 large egg
  • 1 ½ tablespoons whole plain Greek yogurt
  • Pinch of dried basil
  • Kosher salt, to taste
  • Sprinkle of grated Parmesan cheese
  • Olive oil (for greasing)

Instructions:

  1. Crack the egg into a small bowl.
  2. Add the Greek yogurt, basil, salt, and Parmesan.
  3. Whisk until smooth and fully combined—no yogurt lumps should remain.
  4. Lightly grease a ramekin with olive oil and pour in the egg mixture.
  5. Microwave on high for about 1½ minutes total.
    • Around the 1-minute mark, pause the microwave.
    • Use a spoon to gently loosen the egg bite around the edges and slightly lift it to prevent sticking.
    • Return to the microwave and finish cooking.
  6. Let cool slightly before serving.
