Looking for a simple, protein-rich breakfast without the preservatives found in store-bought microwaveable bowls? These homemade egg bites are quick, delicious, and customizable. Best of all, they’re made with real food ingredients you likely already have on hand.
Ingredients (per serving):
- 1 large egg
- 1 ½ tablespoons whole plain Greek yogurt
- Pinch of dried basil
- Kosher salt, to taste
- Sprinkle of grated Parmesan cheese
- Olive oil (for greasing)
Instructions:
- Crack the egg into a small bowl.
- Add the Greek yogurt, basil, salt, and Parmesan.
- Whisk until smooth and fully combined—no yogurt lumps should remain.
- Lightly grease a ramekin with olive oil and pour in the egg mixture.
- Microwave on high for about 1½ minutes total.
- Around the 1-minute mark, pause the microwave.
- Use a spoon to gently loosen the egg bite around the edges and slightly lift it to prevent sticking.
- Return to the microwave and finish cooking.
- Let cool slightly before serving.
Repeat the recipe for as many egg bites as you’d like to make.
